urban trappist brewery

background taken from the princess bride; beautiful faces from the brewers

Biography

Despite my policy of personal isolation, this brew was a collaborative effort with Pat, inspired largely by the linguistic brilliance of the name. Witbier is far from my favorite, yet there I was, brewing it. With my batch coming from Cleveland and Pat's from Cincinnati, I expected explosions upon blending.

Creation

This brew session was entirely too perfect. The temperatures of the mash schedule were hit precisely and swiftly. I had everything well-measured and ready to be added at the proper juncture. The sparging went beautifully without a hint of sticking. I didn't even scald myself.

Flavors: Depends on the blend, but always plenty of orange. More herbal with more of mine; more spicy with more of Pat's. Any ratio yields deliciousness; all varieties have been widely applauded, which makes me feel not nearly quirky enough. Commissions have been discussed after tastes of this product.
